We start with unsalted butter, dark brown sugar, and granulated sugar — creamed together until smooth and caramel-forward. Dark corn syrup goes in next for texture, along with egg whites and pure Madagascar vanilla, mixed until fully combined.
Then we fold in our triple cocoa blend — black cocoa, Dutch processed cocoa, and natural cocoa — creating a deep, layered chocolate flavor that's bold from the first bite. A touch of espresso powder intensifies it even further.
Then comes our dry mix — Vermont's own King Arthur flour, our custom blend of leaveners, and just enough kosher salt to balance the sweetness.
Finally, we fold in dark, semi-sweet, and milk chocolate chips — three kinds, because one was never going to be enough.
Each cookie is hand-scooped, rolled in sugar, and baked to a soft, chewy finish.
