This month’s Cookie of the Month, Two If By C, tips its hat to the midnight ride that sparked a revolution. It started as a test bake — brown butter dough loaded with toasted coconut, caramel bits, and just a splash of Medford rum (Paul Revere’s favorite sip).
The inspiration struck during Boston’s 250th anniversary celebration of the Midnight Ride — after watching a breathtaking drone show over the harbor and celebrating with friends, we knew this cookie needed a revolutionary name. And so, Two If By C was born.
